Baking Cookies with Mema

If I ever offer you some homemade cookies you might want to just politely decline.

Kolaczki are a favorite here on The Avenue, however they are SO much work and face it, I'm lazy. So when my friend Laura sent a recipe for Split Seconds I was all over the easiness.

Split Seconds
2/3 cup sugar
3/4 cup margarine or butter softened
2 teaspoons vanilla

1 egg

2 cups all purpose flour or unbleached flour

1/2 teaspoon baking powder

1/2 cup red jelly or preserves


Heat oven to 350 degrees
In large bowl, beat sugar and margarine until light and fluffy. Blend in vanilla and egg. Lightly spoon flour into measuring cup; level off. Stir in flour and baking powder; mix well. Divide dough into four equal parts . On slightly floured surface, shape each part into 12x 3/4 inch roll. Place on ungreased cookie sheets. Using the handle of a wooden spoon or finger, make a depression about 1/2 inch wide and 1/4 inch deep, lengthwise down the center of the roll. Fill each with 2 tablespoons of the jelly. Bake at 350 degrees for 15 to 20 minutes or until light golden brown. Cool slightly; cut diagonally into bars. Cool on wire racks. Sprinkle with powdered sugar.


This recipe sounded similar to the kolaczki recipe and was going to save a ton of time by not cutting out little squares and dotting with filling then pinching closed. Yeah, well unfortunately something went wrong in my little kitchen and the dough was all crumbly instead of doughy. So I added some plain yogurt and that did the trick, it just needed a little more moisture. We're good. I rolled them, filled them with raspberry filling and baked.

They're very tasty, but something is missing. Oh yeah, the powdered sugar! Well when you don't bake often and you reach for the powdered sugar in the way, way back of the top shelf


if the package looks like this, it's best to toss that sucker right into the trash!

I hate when that happens. But if you're like me...braving the stores right now is not my number one thing to do at this point.

Wow... that's older than things I've found. But really... how exactly can sugar go bad? That one I might have actually still used. I can't imagine what would mold or rot with it.... :)

omg you actually beat my hubby! He'd had way expired things in the fridge and kitchen shelves when I entered his life (and apartment). but I don't think anything was as far gone as 10 years. My hat's off to ya! :)
